            Made a whole bunch of linguine last night with this set up…

            and made a few trays of some meatballs today…

            Can't wait to cook these up and enjoy em tomorrow

                  Sure, P has it typed out somewhere.  It is my interpretation of the classic and took years of honing ,  You'll need  a galvanised dustbin - no pans big enough….. 😃 :D.  Just checked, she has not.  I'll ask Alex to scan the one at home......

                          If you cant find a galvanized dustbin you could also use a steam table pan that they sell at any restaurant supply store…

                              i love eggs.

                              cook bacon.  fry an onion in bacon grease. remove bacon… drain most of the grease
                              add eggs.  add bacon.... add onions.... add franks hot sauce

                              Thats how I like my eggs!

                                  cook it slower… real slow

                                  also, if you use a thermometer consider removing the meat at a lower temp and letting it sit in some foil

                                        GILES PADMORE MEGA-CHILLI

                                        SERVES 6-8

                                        1.2 Kilo Beef Joint cubed (nice big cubes) and you want a "poor" cut of meat - one that will hold up to hours of cooking  - I use Beef skirt by preference
                                        8oz Streaky Smoked Bacon
                                        6oz Button Mushrooms
                                        3 Large Onions
                                        6 Fresh Chillies
                                        Small Handful Dried Red Chillies
                                        Paprika
                                        Hot Chilli Powder
                                        Loads of Cumin
                                        Loads of Coriander
                                        Small Amount Turmeric
                                        7 Tins Red Kidney Beans
                                        4 Tins Tomatoes
                                        1 Pint Stock
                                        Half pint red wine
                                        Tomato Paste
                                        Bay Leaves
                                        12 Large Dried Red chillies
                                        Black Pepper
                                        Salt

                                        Cook bacon until just crisp and most fat released
                                        Fry onions, button mush, garlic and fresh chillies until very soft (you may need to add some oil or lard)
                                        Coarsely grind the cumin and coriander, mix with the other spices and cook with the onion mixture for a couple of minutes
                                        Chuck in the meat and fry for 5 mins
                                        Strain the beans and chuck in with everything else and cook for hours - until correct consistency.
