^ I keep on seeing that on the .jp crew’s IG/FB feeds and wondered what it was called. Looks amazing.
It is indeed very tasty and a popular dish in southern Japan, but available anywhere in the country. Likewise, takoyaki is also pretty good.

a couple more Japanese dishes that are an acquired taste
I love natto but a lot of Westerners tend to object to the pungent smell and slimey texture. But it's really healthy and good with rice. I can give or take shiokara.

You ever try okonomiyaki?
Yep, Sarina taught me how to make it when she stayed with us a few years ago…

and that was a mighty fine meal…

Okonomiyaki is the ultimate food for a night of drinking. Or, for that matter the morning after. I’m not familiar with the other two—going to have to look for them.

Yep, good stuff.
As for shiokara, it's not for everybody. I had the 'squid guts' variety and thought it was ok with rice. Kinda salty. But, i'm sure some would gag at the idea of trying it. Natto, on the other hand, is one of my favorites. I could eat the stuff all day long

Nattou is the only food that I've requested my wife not eat around me…..
Once a month, she gets 1kg of soy beans and makes her own.
Seriously, there is a drawer in the freezer that ONLY has nattou in it, lol -

Seriously, there is a drawer in the freezer that ONLY has nattou in it, lolHow do you make your own natto? I know it's fermented soybeans but what is the fermenting process like? Does it stink up the place? It's definitely an acquired taste. I hated the stuff when I was a kid but over time I started to like it. Maybe if you tried it a little at a time you might like it.

(The abridged version)
Boil the soy beans and soak them for a day or 2, then use some store bought nattou to add the bacteria culture. After than, you let them sit in Tupperware for a few days (In a warm place) while the bacteria multiplies and the beans ferment. As far as the smell goes, idk… She does all nattou making and eating while I'm at work, lol!
She makes her own tofu as well.
*I skip basically all of the soy foods, aside from soy sauce.
