Iron Chef WAYCT - What Are You Cooking Today
-
Beef and Broccoli, fried rice as a side, don't tell uncle Roger @Chap . He would not have approved of my making of the rice.
Maybe @ROman but yours look much better
I bought partly motivated through the Videos a Rice Cooker. Usually I always go the highest Quality possible route with Kitchen Tools but it seems to be something that one doesnt do when it comes to rice cookers. The expensive ones either gain like 10 Features nobody needs or get Gastro sized so serve 30 people so i went with one of Amazon called "Tristar" for 20€ that has like 2000 Reviews or so and seems to do the Job just as intended.

So, inspired by @Alex and @Chap I decided to start making pasta. Paula gave me a pasta making machine about 20 years ago, so I thought I better start using it
My first recipe is:
6 eggs
Slug of olive oil
Some sea salt
300gms "OO" flour
300gms SemolinaI heard that Semolina works well with more rustic dishes (which is basically all I can do anyway)

Homemade pasta is life altering. Great looking dish Chap

Actually no cooking… the fishmonger usually gets fresh stuff on Wednesday, so we went japanese today. He even managed to smuggle salmon from Scotland to Austria

Thats Funny, same here, inspired by @Chap ´s IG Post I went out to the Store in my Lunch break and got some Semola di Gran Duro and made Pasta myself after like 10 Years not making any (expect Spätzle)
Rolled out by hand with an absolut unit of a rolling pin made in germany from german wood by Isenberg, insane price but heavy as hell with ball bearings, made to last with repair garentee.
Picked up some Moliterno al Tartufo and absolutly insane Pecorino with truffle kneaded in, which leads to these dark vaines of truffle all over and an intense AF truffle taste through the whole piece.
There is a Alba Truffle Version too which i may have bought on accident and payed a solid 25€ for a piece like the one pictured, things happen
The final product all plated up with my marinara sauce i preserve once a month for me and my friends and the for mentioned pecorino.
Thanks to Chap for the Inspo, I´m on fire atm when it comes to cocking, whilest waiting for the dough i made some mexican taco seasoning myself for the weekend

I am loving this, and as I need a willing helper @Madame Buttonfly is loving it too…..
-
"willing helper" indeed! Needless to say, I did most of the work

A nephew gifted us for Christmas some Wagyu steaks (filets), which I must say are the best piece of meat I've ever eaten. I made them tonight with Hasselback potatoes and creamed spinach.

Well, I cooked the toast….

Courtesy on @neph93 . He and Hottie gave it to us Christmas 2019 and I have been waiting until we had a load of visitors to break into it. I got bored of waiting

Bon apetit!
It is great in salads too, warm potato salad with mustard dressing for example. It also does well with strawberries, plum, and figs, that kind of thing. Some of the more earthy conservatives are also good. Decent apricot jam, your plum jam. That kind of thing.
EDIT: @Giles I forgot the classic, on bread with sour cream with thinly sliced red onion.
