The above is @Alex recipe for Jamaican rice…it’s really good. I was chatting with a Jamaican whist on vacation this year and she was nodding and smiling when I was telling her the recipe. She approved!! She did say that a trick she uses is freshly grated ginger. Added and was a great touch.

@goosehd My favorite Chinese restaurant in NYC,does a Ginger fried rice that is out of this world.

@Tago-Mago Alex Padmore Jamaican Rice

370 grams basmati rice
1 can (400 grams) red kidney beans, drained and rinsed
1 can (400 ml) coconut milk
250 ml water
2 spring onions, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 whole Scotch bonnet pepper halved
1 teaspoon salt
½ teaspoon ground allspice
½ teaspoon ground black pepper

Put all the above in a rice cooker, and set to white rice function. Its that easy

above is enough to feed 4 well
