Old Bay is shite in any form.

Depends on the crab IMO. I find stone crab claws to have a fine ratio of effort to payoff and they, Dungeness, Snow, and King are so delicious on their own they don't need any help from the likes of Old Bay (mustard sauce or butter delicious but entirely optional). Just in terms of the taste of the flesh of the animal, IMO blue crab doesn't compare to those and that's why it needs a little help from Old Bay (Chesapeake) or Zatarain's (Gulf Coast). Same thing with crawfish: a bit of effort for a little meat, and most of what you're tasting is the boil.

And as for lobsters and crayfish, have to be about the most overrated stuff to come out of the sea*.
All surf does, is fuck up turf.....

Blue crabs are definitely a niche cultural thing. I can easily understand why they’d be disliked by the uninitiated. Sometimes I don’t even wanna fuck with em. But it’s always an occasion for us. We’re raised from babies with them and it’s like a family ritual in the summer. Old Bay is just the default addition. Like turkey and gravy for thanksgiving.
Having said that, as a surf main course for the sake of a meal, imo the best is snakehead/channa. Hands down the best seafood.

Yeah same with crawfish. It’s kind of as much about the boil culture as it is the actual protein. And the protein is more about the texture and the boil than the flesh of the animal IMO. And the potatoes, corn, sometimes mushrooms, etc in the boil are a part of it too.
When it comes down just to the flavor of the meat, that’s what I was getting into above. I’ll take a stone crab claw over Maine lobster. And they’re nice and meaty and usually come ready to eat so the labor factor isn’t high.

@mclaincausey I’m with you on the stone crab. I grew in a part of Florida that had a big stone crab fest every year. LOVED it! 15 or so years ago, I played in a band that was playing the fest, and had them pay me in unlimited stone crab at the fest from a place called Frenchy’s.
