You can catch Halibut in Scotland, but never seen it in a fish and chip emporium....

That’s a shame. Halibut is my favourite. Haddock is good too but have never tried cod. I figured all fish and chip places have both but maybe it’s just a Toronto thing? The place I go to does such a good job frying fish. It’s almost like tempura on the outside but the halibut on the inside is so flavourful and juicy.

Halibut is a bitch to cook....2 seconds too long and it's dry. So I would imagine, there are some reservations about trying it. If you have heaps of the stuff like PNW, then you'll be naturally good at cooking the stuff if you run a chippie....
