I did a little take on a Bánh mì… Viet beef loin with crispy tofu, sesame herb salad and taro onion jam.
I'm no chef, never went to school for culinary arts, never worked in a restaurant. I just really enjoy fine dining, and I think I have a pretty good knack for nontraditional flavor combinations. I spent a great deal of money at Joël Robuchon in Las Vegas this summer, and got a ton of inspiration from him.
