        Cross post from the "Knights in white denim world tour" thread.
        @Jii:

        Decided to make a risotto from random leftovers from the fridge. Chopped up some chili, courgette, carrots, mushrooms and garlic. Found some ricotta cheese, feta and a piece of parmesan cheese as well.

        Fry the vegetables in olive oil

        Add the rice and let it fry a while

        Add some wine or vinegar and some broth (in this case chicken stock), let the rice soak it in some and add more little by little until the rice is done. Take the pan off the stove and add the cheeses and salt and pepper to taste

        Served with some chicken and rocket and a sprinkle of olive oil

        Ended the meal with a perfect espresso doppio

          Did I mention we have a pig and a cow in our freezer?

          Here are some beef shortribs and pork baby back and spare ribs just after I put them on the smoker. I'm smoking these with a blend of oak and peach wood.

          I'll keep updating as things progress.

                              Just a heads up with the nitrate free bacon, it's frequently higher in nitrates than regular bacon.  This is because to get the nitrate free label the "chemical" source of nitrates (pink salt) which is used to cure the meat is replaced with celery juice, which is still high in nitrates but is naturally occurring so it doesn't need to counted as a nitrate on the label.

                                    The other thing to consider about bacon and other cured foods, is that nitrates and nitrites aren't necessarily bad for you (keeping in mind that processed foods still have other bad things in them).  There's no need to cut them out altogether, although I'm not sure about the paleo diet, just moderate them.

                                            Rafa, Whole30 is 30 days without eating dairy, grains, legumes, soy in any form, added sugar of any kind, or alcohol. Carbs are ok as long as they come from foods that are approved 😉

                                            I did Whole30 in January, and it was a really interesting and positive experience.
