          Just a heads up with the nitrate free bacon, it's frequently higher in nitrates than regular bacon.  This is because to get the nitrate free label the "chemical" source of nitrates (pink salt) which is used to cure the meat is replaced with celery juice, which is still high in nitrates but is naturally occurring so it doesn't need to counted as a nitrate on the label.

                The other thing to consider about bacon and other cured foods, is that nitrates and nitrites aren't necessarily bad for you (keeping in mind that processed foods still have other bad things in them).  There's no need to cut them out altogether, although I'm not sure about the paleo diet, just moderate them.

                  so the paleo and/or the whole30 diet are pretty much a low/no carb kinda diet, right?…

                        Rafa, Whole30 is 30 days without eating dairy, grains, legumes, soy in any form, added sugar of any kind, or alcohol. Carbs are ok as long as they come from foods that are approved 😉

                        I did Whole30 in January, and it was a really interesting and positive experience.

                          thanks a lot for explaining mate! I went through the page and read about it, but since I didn't saw any kinda carbs listed I thought it would be no/low carb…now I know, thanks!
