It's a very forgiving process and given your skills won't be a problem. You're looking for a soft, supple, but not sticky final dough. In that respect you can lower the hydration quite a bit on the final mix.

Not sure if using a bread maker is blasphemy on this thread lol, but I was gifted one in my and my fiancee’s apartment warming and this thing is killer. Got my own recipe and all.

Making bread tonight for my wedding tomorrow, we’re doing communion with home made bread.
