Yesterday rode past this interesting rocky outcrop right behind the small town of Abrapampa in northern Argentina (Jujuy province).
The journey is the objective.

@jiminstitches only a general understanding of the why.
There is a fault line and as the underlying plates separate, the top layers start slanting towards the vertical, giving off that neat pattern of stacked differently-colored slices.
The bit I don’t know anything about, is why it undulates nearly as a sinusoidal wave along the length of the fault line….???? Perhaps that is what you are asking?
If all goes according to plan on this trip we should drive by that town again on the way back. I’ll try to ask about the wave/ sinusoidal pattern.
Maybe we have some geologist or rock guys on this forum who can explain this better than me?? -
@motojobobo Interesting indeed. Was it you that posted pictures of the hexagonal/columnar (basalt) rocks a while back as well?
Then again, maybe I'm dreaming and it wasn't on this forum at all

Looking at the picture, the beds are dipping more steeply on the left side of the picture. From the picture, the rock appears to be volcanic deposits. Ash, tuff, possible basalt flow above the thick pink deposit.
The undulating appearance is caused by the topography of the area. Dipping layers are eroded into valleys and ridges. without the ridges and valleys, the dipping strata would appear straight from this view.
It would be great to visit that area.

When I was in Madeira in September, they had the same landscape. It was also formed by a volcano.
