Ramen looks like images of Tokyo dishes. Great stuff.
I made Priya Krishna’s Saag that she does with feta instead of paneer. I claim it’s a better side without cheese. Had it with Priya’s bell pepper sabzi and take away tandoori chicken.

That looks amazing @Alex . It reminds me of My wife and I's favorite Italian restaurant in the Minneapolis area. They make a Boar's Blood stew that looks deep and rich like yours, serve it over hand rolled Tagliatelle and top it with a huge pile of Pickled Shallots.
Your dish looks great.
I have a hand crank pasta roller, and a Kitchenaid (or 2). Do you recommend the attachment?

Unrelated, I got an InstantPot for Christmas and it makes perfect rice every single time. This is something I wanted to be able to do for like 25 years (at home).
I haven't had too much luck making anything else in it. But it makes great rice for sure. For making meat I'd rather just use the slow cooker. I guess this has a slow cook function but I need to get a different lid.

Thank you guys @jordanscollected got the pan from a small supplier of japanese knives and kitchen tools in Germany… it’s an elder japanese couple. But if you google tamago pan or tamagoyaki I am sure you will find a supplier in you area
