Agreed. This is lean, thick, organic, nitrate free bacon too, tried to do it right. Also used grass fed unsalted butter. This may have been my best effort on this dish.

      Think it, be it.

I agree.  Minus the Brussels sprouts, of course.  Those things are disgusting.

There are very few vegetables that I find utterly inedible, regardless of preparation.  Brussels sprouts are one, despite their current trendiness on the American food scene.  Okra and collard greens also on the list.  Ick.

I like endive.  That's good, as far as I'm concerned.  Celery, too, for that matter.

Any decent gumbo will have celery in it, as it is elemental in Cajun/Creole cuisine, whose holy trinity is celery, onion, and bell pepper. Most recipes either start with a roux or the holy trinity.

came to my mind just yesterday.

mix beef with ground almonds (my favourite and actually secret ingredient to almost all my meals 🙂 ), salt, pepper and chopped peppers and let it rest for a few minutes.
while it rests, mix avocado with salt, pepper and a bit of olive oil.
take mixed beef, spread it out and add the avo mix in the middle, form paddy and throw everything in the pan/on the grill…done and enjoy 🙂

I made a black bean soup with pulled chicken breast last night but I ate it all before I had a chance to snap a photo 😃

Idea: made a slaw using a mandolin out of raw Brussels sprouts.  They are like tiny cabbages after all, no?
