This is a grail for many, hopefully not too soon so the funds manage to get in check before release haha🥰

How do you choose between this, pale rider and natural big buck?!?

None of these are in the works currently for IHUK, but they will come soon enough after the PR and Big Bucks are made. There are only so many things a few hands can make at once..

How does this compare to the IHJ-49 in terms of warmth?

Don't mean to disagree with @Alex but I actually find the IHJ-49 split steer type iii noticeably heavier and warmer.
