I love all these Indo-Anglican dishes. Even Coronation Chicken has a place in my heart and I adore Kedgeree. I will save that photo for when I’m installed in my new kitchen.

On another note, doing chicken dopiaza later today for the first time in years. I’ll remember to take pics.

If you like Coronation Chicken, you need to try this version.  Hands down the best version I have ever eaten.  every single person I have ever made it for has asked for the recipe - which is how I got it

I didn't have a set up as elaborate as that but I tried cooking my 2nd ex-wife bacon and eggs on a KOA wood stove and it was a total disaster

80%  Biga with 80% white flour and 20% dark rye.

I used the Padmore "I-can't-be-arsed-to-bake-tonight" method.  For this method, at the end of the bulk ferment, you say "fuck-it", shrug your shoulders and put the dough outside in the cold.  You then you carry on from where you left off the following morning when you can be arsed…
