      sunday morning, omelets

knob of butter in the pan
2 eggs, splash skim milk, salt, pepper
(splash of hot sauce if desired)
later, smoked cheddar and 2 slices bacon
goal is an ever-so-slightly runny center
      restaurant omelets are always overdone
one fold coming out of the pan, not two

my 3 year old has reasonably sophisticated taste
but still prefers hers on a heart shaped tinkerbell plate

Today I made some chicken marinated in a mix of sweet chili-sauce, soy sauce and holy basil with a vietnamese salad. A bit of avocado on the side (again 🙂 I love avocado..)

Thank you! I do think that it's really important that the food both tastes and looks nice, makes it so much better as a whole.

Chicken filé (sliced) in coconut creamy sauce, basmati rice

take 600g of chicken filé, honeymarinated (breasts) and slice them
fry in hot pan, add abit currypowder
while rice is cooking pour 2 dl of "food"cream (that's not real cream from cow) and 2 dl of coconut cream in to the pan
slice 3-4 peach halves (in can in syrup) and toss them in, add little frozen corn
                    let stir for 10-15min.
currypowder salt and citronpepper to your taste. (this is supposed to be sweet)

                    done, eat.

edit, yup, I bought whole kilo of chicken, so fried 3 breastfilés for next weeks lunch

Made some Borscht-soup yesterday. Beetroots, carrots, onions, garlic, cabbage and spices and some smoked turkey breast for protein. Let it simmer for three hours and served with russian sour cream. Delicious!

                            What you need:
                            1 Cob loaf
                            Handful of fresh basil chopped
                            3 tblsp olive oil
                            3 tblsp balsamic vinegar
                            2 cooked chicken breasts shredded
                            2 peppers chopped
                            1 red onion finely sliced
6 thin slices of edam cheese
                            150g rocket chopped
                            2 beef tomatoes sliced.
                            Pinch of salt and pepper(optional)
                            Method:

Slice the top third off the loaf and scoop out the inner. In a bowl mix the basil, olive and vinegar and seasoning, add the chicken and tightly pack the bottom of the loaf with the mixture. Top with peppers, onion, cheese, rocket and finally the tomatoes now  replace the 'lid' you cut off earlier. Wrap in cling film and put in the fridge and weigh it down with something heavy, leave it overnight and cut into four or six pieces the next day….Enjoy!

Sorry no pics of it this time round as i ate my last piece this morning before i noticed this thread but i can assure you that you will love it if you give it a go.

Actually, we yanks generally call it arugula.  Not sure why, but it is good to eat, regardless of what it's called.
