@Jett129 haha, exactly. That was the first time i took a look about 6hours into the cook. Will stay shut until/if there is a need to do a wrap to speed up the last 20F

We're making coleslaw and there will be some salad. Then I made two BBQ sauces, a Carolina Gold and a Bourbon BBQ so we have a couple of different options to work with, and we have some brioche buns too

.      I’ll be right over. I love pulled pork with a mustard based sauce and coleslaw on bun,but brioche is next level.

@Filthy @Jett129 I can confirm that the meat was incredible!  Great performance by @Alex for the Kamado's first spin.

We had some supermarket burgers but the pork was from the butchers

A butcher. I pretty much only buy meat at a butcher unless I can't avoid it. The quality in supermarkets in the UK is getting worse and worse

The reason I asked is because the supermarket meat in my neck of the woods is useless as well. I have a really great old school style butcher,who takes really good care of me. I just have to let him know in advance if I want a specific cut of meat,like a pork butt,or a brisket flat.
