If I was living on my own then being veg or vegan would be fairly straight forward.
( Although I admit being a Vegan would be very hard for me since I like those things more than meat )

But living with other people it is incredibly difficult.
They want to do 1 shop for all, cook 1 meal for all and so on and so on.

Anyway one of my fav dishes is ok for vegetarian or even vegan if there is such a thing as vegan pasta.

Simply boil pasta. And for a sauce use fresh whole sweet tomatoes in a saucepan and heat and stir.
The toms just fall apart from heat. Add garlic, oregano, salt, pepper.
When the pasta is done, drain it and throw it in the sauce and cook till it is a nice consistency.

Taste is very good for such a simple basic dish, nothing meat or cheese needed.

Lots of vegan pastas out there  😎 And yeah: am I glad I get to cook for myself…

This is the lasagna I made a couple of days ago... Ricotta and pumpkin... Parmesan cheese and pinenuts on top... Incredibly easy to make...

Clean and cut pumpkin in quarters, toss it in the oven for 25', make tomatosauce (or be lazy and use a jar), start with a layer of sauce, first layer of lasagna, cover in ricotta (mixed with some pepper, seasalt, and water, to make it easier to spread), layer of pumpkin, tomatosauce, and so on... End with ricotta... Sprinkle cheese and pinenuts on that... Pop in the oven, done.

I made my own tomatosauce from scratch, but otherwise this doesn't take longer than two hours (including baking pumpkin and lasagna itself)...

Grilling some excellent, excellent seitan… And having it with organic basmati rice.

            Good job!

Forgot to take pics (again) but I had a ratatouille with lima beans and rice tonight. The French would collectively flip out, but I've started roasting the veg in the oven while making the tomato sauce on it's own, then mixing it together afterwards. Saves time, cuts down on the excessive oil usage and actually tastes better as the onions and peppers get much, much sweeter on a slow roast.

Yeah sweet peppers stuffed with good goat cheese and grilled in the oven (or BBQ) = heaven for me…

So what veggies did you roast in the oven for yesterday's dish?.. Courgette?.. Egg plant?.. Peppers?..

Quick "fuck it I'm hungover and need to use these expired leftovers" ovendish...

Falafel with brown champignons and slices of goat cheeses with fat slices of mozzarella cheese sprinkled with parmesan cheese and pine nuts... Drizzled in olive oil and thyme...

              Fuck it - I'm eatin...

Yes, all of those, plus halved plum tomatoes and onions roasted in thyme and a little olive oil. Garlic, oregano and parsley in passata for the sauce.

You just made me realise I need more falafel in my life.

I’m not a vegan or vegetarian but I do try to get my son to eat his veggies. He loves spinach and right now I’m getting him to eat okra, or as I call it, tummy food. After a couple of bouts with constipation I think he’s finally caught on to why fruits and veggies are important [emoji106]

@Seul We have these once a week on Tuesday night's…dirty burger night. Brioche bun, mayo, mustard, pickles, tomato, shredded lettuce, onions, sometimes ago if I fancy it.  I'd  defy the most hardened omnivore to tell the difference!

Well, not if you're going to put pine nuts on it.  Silly Belgirian.
