          Thanks! I've always wanted a nice Lagiole. The name "lagiole" isn't protected and anyone can use it, so you have to do your research before you buy as there are only a handful of versions tht are actually hand-made in France. The rest are made in China. The engraving on the spine is actually the maker's mark of the guy who made my knife. I think Lagiole En Aubrac only has a dozen knife makers on their team if memory serves.

          That Chef's knife is pretty, but it always cracks me up how inexpensive it was. The durability of its edge rivals any other knife I've ever used. I really dig Japanese steel.

            i was never overly impressed with my henkel 5 star
            my favorite knife is just the cheapo "yellow" handle 6"
            i know you know what i'm talking about with that knife

              Giles' buddy's son has completed the sheath I ordered for my Wharncliffe. He will now add jimping to the back of the blade in the style of a CRK Sebenza's jimping.

                  Seawolf, that Laguiole really caught my eye, to the extent that I've spent the last two days researching them - can't seem to find any UK dealers, which is a pity as I'd like to check one out before I buy. I'm undecided as to which maker, but the favourites are Laguiole en Aubrac and Fontenille-Pataud, then it's just a choice between wood or horn handles.

                    I have an Aubrac, and I love it. My dad brought it back from Provence, and it's my daily suit and tie carry.

                      JSJ - a nice gentleman's carry.

                      Go for the Aubrac.  They're fantastic.

                      We also got this set of steak knives. Also with juniper handles.

                            As you can imagine, our kitchen at home is pretty well stocked, but steak knives are one thing we never really picked up. Earlier this year we were planning a trip to the UK and France and decided we should look for steak knives over there. I knew I wanted Lagiole, but I didn't know anything about them until I started doing some research. I'm so glad I settled on Lagiole En Aubrac because they feel so well made. The Juniper handles smell amazing, and I'm sure they will patina over time. I also wanted steak knives that weren't serrated so that I could sharpen them.

                              Just bought 12 of these from the local market (olive wood handles)…

                              Plus a few more assorted others.  This is a carving knife…

                              Which rather ingeniously (for a simpleton like me anyway), folds into a boning knife…

                                        The thing is, the name Lagiole isn't protected like "champagne" for example, and can be used by anyone. There are only a few makers that are actually hand-crafting Lagiole knives.
