      My partner and I have 8 quails, my first attempt which went okay need to tweak some bits for a recipe but we have two more 2 males which need to be eaten as they are surplus to requirements. I have done all the prep myself, so we are going to put this lad in a brine for 48 hours, stuff it, and wrap it in bacon for a little light lunch on Saturday.

                @Tago-Mago okay, need to have a little play with the ratios, left it in a brine for 48hrs but might of put a bit too much salt in it, as it was on the tad salty side, but I stuffed it with goats cheese, fig and walnut on the inside which was nice, but lessons learnt for next time, it kept me going until I went out and got some Birra Tacos for lunch haha

                        Welp. Long overdue attempt at gnocchi did not go so well. Should’ve trusted my instincts in that the dough was too sticky and added more flour. It held its shape when cooked but the consistency was much too mushy/lacked any tooth to it. Going to give another go this weekend, hopefully w a better understanding of the proper consistency/ratios ✌️

                          A should have taken pictures but I didn’t moment:

                          Steak with Roquefort cheese, grilled cauliflower and zucchini, jalapeño poppers, baked potatoes, and a nice bottle of wine.

                          Finishing the meal with a glass of Grand Marnier Cuvée de Centenaire.

                                A few litres of chicken stock. For what, I don’t know yet 😳 i have just jointed a chicken for a Balti, and can’t bear to chuck anything away…

                                  Chicken broth freezes perfectly. We keep the bones of every chicken we roast and when we have 2 or 3 chicken worth of bones we make broth and freeze it in 2-cup sized molds. Super convenient (if you have the freezer space for that.)

                                    I have 2 drawers in the "big "freezer dedicated to stocks of various types.....Frozen in 1000 and 500 ml bags....
