I did a warm spot white levain yesterday too and the crumb is a joy to behold. Definitely not going back to the steel apart from when I bake pizza or fancy learning the pretty pattern thing.

Decided to try out a Ciabatta for the first time.  The Poolish is brewing at the moment.

Fun fact.  Ciabatta was invented in 1982 by an Italian baker who was pissed off by the ubiquity of the French Baguette and his country's increasing reliance on it  (which in itself, was not invented until 1920)….

Looking forward to seeing that… Got a polish on myself. We're on "red level" here so most teaching is digital and everything else is closed. Knocking off a dough every other day!

Hmmm…. just bought 4 litre Sabor. The next size up is 6litre which seems unnecessary.

I use a 6.3 litre LeCreuset… but that's because I use it for big stews too. 4 litre should work well. The only thing is, if it is too small in diameter it might be difficult to get the bread in it when it's preheated
