        Thx. No it just has the look, an Iaitō is edgeless. A Shinken would be a Katana with a sharp blade. (Usually) not for practising Iaidō katas. But necessary for Tameshigiri = cutting a cylindrical tatami mat.

        Thank you for the info. I’ve googled a few of the performances on youtube and it’s impressive stuff.

            I’ve run into a lot of these when I was inspecting fish filleting operations. The ones with the backsplash are nice because you don’t have to clean the walls unless you’re really messy, the problem is there’s a seam between the backsplash and the table. That is a potential harborage area for bacteria. Unless you really need wheels, they can be a pain too as they’re a harborage area and they get fucking disgusting. They’re a pain in the ass to clean. I don’t know what your regulations say, you might get away with gross wheels since they’re not a potential food contact surface.

            I’d check to see if there’s a consultant you can work with to find the ins and outs of the regulations in the field and location you’re in.

            You should also find out what kinds of sanitizing agents you have to use, I don’t know what’s required in AU. If it’s bleach, you’re could eventually have a corrosion issue even if it’s a stainless steel.

            Then again I’m only a former FDA investigator, some around here treat me like I’m an idiot and don’t know anything about food safety.

                          Ugh, these Microtech OTFs are addictive. This UTX-70 Apocalyptic Hellhound found it’s way into the collection. I like the 85 a lot but this fits in an IH western shirt a lot better.

                            I’m jealous @Anesthetist. Sadly my state isn’t OTF compatible and by the time I get to one that is I won’t be in the market for any large purchases.

                            I’ll have to dry my tears with this badass…

                            Disclaimer: Don’t dry your tears or anyone else’s with this knife.  The steel is not corrosion resistant and you will cut your face off.

                                That’s right.  The GB2.  I may have to find a way to cheat or steal an Ultratech away from someone whilst on the road somewhere.

                                I’ll hear there’s freelance employment at truck stops.  I’m not proud.

                                  So my cousin has an Ultratech and compared to my 85, we both agree the 85 is a better size for an EDC and has a way better blade to handle ratio. Just food for thought, but honestly both are badass. I think I might start saving for a Troodon Hellhound. I really dig that blade shape.

                                    Obviously you’re right.  But if we were taking about practicality, we’d not be talking about $400 automatic knives.  I say go with the biggest, stupidest double edged son of a bitch you can get your hand on.  Maybe something forged by Orcs on Mt Doom.

                                      I have an 85 and think its great. I was trying to source a 70 for quite a while. When i finally found one i was pretty disappointed. It’s really more of a toy than a tool. Open envelopes maybe. Just didn’t feel sturdy at all. Sent it back. Too much money for something with such limited application. My super tiny kershaw was $12 and is a handy box opener.

                                        The 70 is definitely a toy, but TBH I think all OTFs are. I wouldn’t use any of them hard. That and a touch of pocket lint or fuzz and they go off track and become useless. Still, I like em and they open letters like a son of a bitch [emoji23]
