I like both, slimmer definitely suits a more vintage look, chunkier looks better with more modern cuts of denim.

nice.  Im thinking the close sole trim is the way to go if you get a single leather sole.

Agreed.  The extra width on the double welt stitch throws off the proportions of the single leather sole.  On the double leather, it looks right, though.
