I have a week off next week and want you lot to give me some recipes… Ideally I'd like to trade some local vacuum packed veg(an) stuff...

Well we can just fill this thread with tons of our crap I bet...

Look what I just bought at the local hippy store!.. Smoked tofu with almond and sesame...

I'm a fan of bean chilis, but I don't really have any set recipe for making them. Normally I start with dried, rather than canned, beans.

Adding chocolate or stout are options. I suspect that both will appeal. 🙂

I've cooked this casserole before, and it came out well. It's pretty easy.

I also want to try making soy milk. I've got a stack of beans in my cupboard and a monster blender, so it might be a project for the weekend.

It was actually a chocolate porter, rather than a stout, that I used in a chilli. I'm not a drinking man, so the distinctions escape me. 😉

Although when you start going into chocolate you break the vegan code…

I'm not vegan at all, but I try to only eat cheese that's expired (freegan baby), and don't use any other dairy products besides eggs…

I also eat salmon I can get for free at work (freegan baby) so I'm not even vegetarian really...

Why did I even start this thread  😠 :o 😎

I made up a batch of soymilk yesterday. You need:

                        • 160 grams soybeans

                        • 1.5 to 2 litres of water

                        • Salt, sugar, vanilla, etc. to flavour

                        And the steps are:

                        • Soak the beans overnight.

                        • Drain, and blend (in a food blender) with fresh water.

                        • Strain using a fine sieve, cheesecloth, muslin, etc. The byproduct is Okara, which you can use for cooking something else.

                        • Bring the raw liquid to a boil. If you're adding salt, sugar or flavourings then add them here.

                        • Cook for 20 to 30 minutes on a low heat. Keep an eye open to ensure that the milk doesn't boil over, and keep on stirring because it can stick to the pan.

It's pretty straightforward, and there are plenty of recipes around the web. I'm not sure if it's entirely worthwhile, but it was something to try.

This used to be one of my mother's favourite soups. It's pretty simple to make.

                          Ingredients:

                          • 1 Large Onion

                          • 8 oz Red Lentils

                          • 8 oz Parsnips

                          • 2 pints Vegetable Stock

                          • Curry Powder

                          • Optional: 1 tbsp Fresh Coriander and 4 tbsb Fromage Frais to garnish

                          Method:

                          • Fry onions.

                          • Stir in curry powder, lentils and parsnips, and fry.

                          • Pour in stock.

                          • Simmer for 35 minutes.

                          • Optional: blend

My mother used to run the soup through a blender, and it becomes a thick liquid. It's better that way.

I'm making it right now. I've used a red onion, as I prefer these, and added a bit of garlic and a carrot that was past its best.

That's what the soup looked like when I made it this afternoon, a consequence of using brown lentils! 😶
