…I don't get it.  I mean I get it, but I don't get it....  Maybe I just haven't seen enough 'naked' lasts to appreciate the differences

I think they are great Tiger. You can see the thickness of the lasts from the top view. If you own one of the top view you can make visual reference to other lasts. Ie in the photos can clearly see the 2030 is for a narrow foot and the 310 is wider. Also that others are narrower in the heal.

I'm a standard US 11D in most everything.  The Viberg size 10D 2030 last fits me just fine.  On a related note, the White's 10D swing last fits great on me, too.

does anyone can tell the difference in width, between a D and an E width?

Probably about a 1/4 inch, but I know with other manufacturers it varies depending on size, last type and sometimes even leather.  Perhaps Morgan would be better able to answer for you.
