I used to be crazy about really hot hot sauces, salsa, and eating hot peppers, but it’s finally caught up with me. Too much heartburn these days.

Oh, and mackerel is one of my favorites too. I would also eat a ton of that.

                        We got the meats.

Meant to post this the other day I seared the last of the elk strip. Actually thought this was the last of the elk until yesterday. I found three big pieces of elk tenderloin. This is one of them portioned into two steaks. I’m getting ready to sear in the carbon steel pan. Too lazy to fire up the grill or the green egg.

Oh, and I had this Uruguayan Wagyu ribeye and the grass feed ribeye delivered last week. They both were super frozen so I threw them threw them in the freezer. I think I’ll have to do that 6 to 8 hour semi thaw in the fridge and then portion it out and refreeze. Unless somebody knows a better way.???
