      Note to myself, don’t use expired yeast for baking bread

        Last time my partner attempted focaccia she used expired yeast and the results were similarly sunken. Might make good compost?

          Last time I used expired yeast, I made a brick….

            Maybe my house has some of those bread brick walls and that’s why they are falling down

              My oven has a warming drawer that I can set to low for making starters, allowing bread to rise, or keeping prepared dishes warm….

              It got a little too warm and I accidentally cooked my poolish starter…

                  Zombie poolish looks fun though @goosehd. Baking fuck ups are often amusing and galling in equal measures. If I fuck up this bulk fermented overnight focaccia dough I’ll be sad though.

                  I also have two poolish mixes proofing. Plain white in the bannetons, a little bit of whole meal and rye blended in the tins.

                    They look great @neph93 and can’t wait to see the results.  Did another fermentation yesterday and will start on the next part after the kids are on the bus.

                            Forkish really changed my approach to baking bread @goosehd good choice

                            Thank you so much! I just use whichever Forkish pizza dough recipe that fits my schedule, but i think the overnight straight pizza dough is my favourite. It is so good to have it the fridge as it can be taken out and made in 30min. It makes any meal into a feast.

                              Getting there…used a flour with higher gluten and higher protein content…
