Pocketknives/Kitchen Knives/Fixed Blades

I like the more rounded, contour heel. There is a Damascus/Sheephorn listed that is nice on the site, but I don't see anything from Ohta that is quite right. It's a little thing, but that heel makes a difference in feel when skinning small game, or other tasks that take more control at blade tip.

I found a site with killer gyuto and other Japanese steel. Aogami clad with stainless, incredibly thin. In a word, "sploosh."

I need to stop looking at this thread. I found a Japanese kitchen knife forum and had to use the Men In Black memory eraser thingie immediatley afterwards. Chefworks just came out with their Rain line with Ken Onion. Worth taking a look. I bought their 4" chef's knife for Jody for Christmas.
