      Leathers

Ed will tell you to avoid chromexcel, and it does mark and scuff easier than most other leathers to be honest. I have oxfords in chromexcel and SDs in dress, of the two I would go for dress leather as it is much harder wearing and evolves beautifully.

The exotic leathers are really a matter of your personal taste, but be warned that water buffalo is very thin and can split.

      Sole/ midsole

A double midsole will obviously give you a little more height, but can look a little "clunky". A leather sole is very popular, but can be not practical if you live somewhere wet, like me. I favour a vibram half sole, and a single leather midsole for versatility.

Style of boot is entirely down to personal preference, along with colour etc….

Brown dress is great, but it is almost black. I've not got any experience of their smooth leather, Ed (Demonito) is the man for that.

oh my, this is brown dress? it looks totally black! or is it dyed black over brown so that it'll age nicely into brown?

my black chromexcel.  I like CXL, it does scuff easier but it has a character that the dress leathers seem to either lack or take much longer to develop.

Regular White's (non-dress) leather is already rather soft considering it's thickness and keeping in mind it is not tanned and or stretched to death (like most fashion leathers). I agree that Chromexcel is tad bit softer and the depth of the color is quite amazing, but after I got a pair (which I love) I would not order another one in Chromexcel, since it need that much more care. Second from the left are black Chromexcel.

I think your boots below are the reason I got into this whole White's madness with a total of eight pairs so far (sold a few, bought some others, am pretty stable at the moment).

Just read your dilemma between the Whites and Vibergs oxfords, I can relate as I had the same issue.

I handled the Viberg version at 14oz in Berlin, and in my opinion they are not $200 better than the Whites/ Bakers.

The SJs were by far the stiffest, I haven't found the Oxfords or the SDs to be stiff at all. However, the addition of a double leather midsole would stiffen then up.
