There is no MAJOR difference, they're both straight leg jeans with a slight taper, but then again so is the 634s.  Describing fits by words only goes so far, it's best to compare the size charts and look at the photos.  There are only so many things you can do to a straight leg jean's fit while trying to maintain a classic look.

I would say go true to size, IH got the waist sizing absolutely perfect on these, they'll shrink to tagged size.

The fabric is a heavyweight unsanforized denim which is exclusive to Self Edge and was developed for us for the SEXIH07 jean. It was the first time Iron Heart had done an unsanforized denim, it ages with extreme contrast and great character that rivals the best Japanese denim available today. With a silhouette that we designed to fit every body type we've decided to do these in a wide range of sizes due to it's extremely versatile fit.

damn, I had convinced myself these were same cut as SExIH07, and therefore I could pass them up since I've got a fresh pair of those… now I might have to buy these

from the measurements this is almost a perfect pair of slim-straight jeans, in my opinion sexih07 is a hair slimmer than these..  gutted that im tied with other financial commitment at the moment, would have been an insta-cop

19oz has a heavy rigid thick feel like the SR denim
not slubby, not a ton of stretch
prob not quite the high contrast fade of the SR though, that denim is pretty amazing

The denim actually to me feels like a lighter weight version of the SR (anniversary) denim.  Similar feel and indigo shade.
