One of the things that has been pissing me off for years is my inability to sharpen knives.  Today, I decided to try and get that monkey off my back…..

I think very well.  I've done 4; 2 western kitchen knives and 2 Japanese kitchen knives.  Different edge angles between the westerners and the Japanese.

My cutting an onion test suggests I have good edges.

Carving pork with the western carver later, then I'll really know.

This is a long overdue topic of conversation here!

That looks like an Edge Pro! I have one of those too @Giles. Once you get the angle dialed in it’s rinse and repeat and a joy to maintain.

And for philosophy and technique, this is my reference, and also who I buy knives from. Chefknivestogo is a great resource too. But I choose jkimports over everyone for the experience. The real deal Holyfield https://www.japaneseknifeimports.com/

And this is the playlist of his sharpening videos. From start to finish

                Amazing @Chap!!

It’s a lot of fun to see him in the back of his shop. This video is an awesome resource. He also has done live videos while he’s going through his sharpening queue and it’s crazy to see some of the more heavy duty thinning and reshaping he does on a huge spinning stone wheel.

@Giles depending on what type of grind the knife is (hollow, flat etc) will determine the best angle to work at. Once you've used a stone and/or ceramic, you can get great mirror edges with a strop.

Not that I'm an expert at all. My Spyderco UKPK needs retipping, bu Hennie Haynes can do that for me, saves me making it even worse.

I've had both. I like the Edge Pro better than the Lansky. I'll be interested in your take.

I asked @Father Christmas for the Lansky kit, because I find that the Edge Pro is virtually impossible to use effectively on some of my small curved folders.

I tried the Lansky out this afternoon, and really liked how it put a great edge on some of my smaller blades….

Ah, very cool. I remember that what frustrated me with the Lansky was the need to move the blade up & down the clamp, but obviously this is not a problem with a smaller blade.

@Giles I’ve had to perform some magic while sharpening my Spyderco Delica as well. I don’t have any of these nifty add ons like the small knife attachment or the new slide guide, but I do recommend the drill stop collar to keep the angle consistent between different thickness stones

                                          And this is key:

I need something to sharpen my pocket knife (Fallkniven FH9) and my Leatherman. I’ll use it on my kitchen knives if I can, but it’ll predominately be for the smaller blades I use at work.

                                            Thanks.
