I think you need to get the leather thinner where you are going to sew. Half thickness is good, then you get the sewn part to be as thick as one side/strap. Hope you understand what I'm saying.
I think I'd use around 5oz. leather lined with 1-2oz leather. for such item.

glue the lining to outer part. and still make the edges/area where to be sewn thinner, even with 5 oz leather.
Get one of these to get edges beveled.

i'm no tough guy & i never hide the fact that i wear stockings under my mid-weight Iron Heart's (18 oz devils are mid weight in the scheme of things). you also forgot to mention chaps, be secure in your skin.

just wanted to show you the jeans of my nine years old son which i made for him early oktober this year.
the way they shred their pants in just that short time is crazy!
surely not worn everyday and often in the washing machine and the dryer.
and some rusty hardware…
